In Bilbao’s iconic Plaza Nueva, the historic Víctor restaurant champions traditional Basque cuisine, thanks to the masterful touch of chef Javier Sainz in the kitchen, Víctor Sainz at the bar, and Rebeca Sainz’s expertise in the dining room.
In the very heart of Bilbao’s Old Town, the iconic Víctor has been leading the way in traditional Basque cuisine since 1940, sticking to its roots.
As autumn and winter set in, the restaurant unveils its most comforting menu, making seasonal produce the true star of its kitchen. Among the must-try specialities for warming up on a cold day are hearty stews, game dishes, mushrooms and wild fungi, its iconic cod pil-pil and Vizcaína-style recipes, and its fresh fish.
As well as providing excellent service in the dining room, Rebeca, a renowned sommelier, has an in-depth knowledge of a virtually endless wine cellar. Put her to the test.
