Bizkaia continues to be the province in Spain with the greatest number of Michelin stars per kilometre. Haute cuisine earned new distinctions from the prestigious international gastronomic guide at the gala held at the end of 2025.

In 2026, Bizkaia broke its own record for the number of Michelin stars, confirming the vitality of its cuisine.

Azurmendi

AZURMENDI KEEPS ITS THREE STARS

Chef Eneko Atxa’s restaurant in Larrabetzu maintains the highest distinction awarded by Michelin. Azurmendi combines sustainability, high-quality produce and creativity into a concept that has been recognised in all kinds of competitions. The land, traditions and local producers provide the basis for dishes that create authentic sensorial narratives.

But Azurmendi is not a solitary light on a desolate cliff.

On the contrary, Bizkaia has a good handful of restaurants that boast a Michelin star on their doors.

Eneko

Eneko (Larrabetzu) 1 star

This is Atxa’s additional project. Two kitchens are visible to diners, offering signature dishes that remain faithful to Basque tradition and also reflect the chef’s philosophy.

Ola Martin Berasategui

Ola Martín Berasategui (Bilbao) 1 star

Martín Berasategui’s offering at the Tayko Hotel in the city’s Old Quarter provides
a fine example of the creativity of this master chef from Guipúzcoa.

Nerua

Nerua Guggenheim (Bilbao) 1 star

In the heart of the Guggenheim, Josean Alija has made Nerua a true icon of contemporary cuisine with minimalist recipes that appeal to both the palate and the mind.

Islares

Islares (Bilbao) 1 star

Chef Julen Bergantiños, a local icon of the new gastronomy scene, has achieved international recognition for the first time in his burgeoning career.

Zarate

Zarate (Bilbao) 1 star

Sergio Ortiz de Zarate’s seafood cuisine is based on his exceptional knowledge of fish and his skill in handling the finest raw materials from the Cantabrian Sea, brought in daily from the ports of Lekeitio and Ondarroa.

MIna

Mina (Bilbao) 1 star

It has moved from the Marzana quay to Calle Ercilla without losing any of the vigour of its recipes. Sophisticated culinary technique and a reverence for locally sourced produce characterise Alvaro Garrido’s creations.

Garena

Garena (Dima) 1 star

Chef Julen Baz offers modern Basque cuisine with a solid traditional foundation and locally sourced ingredients, featuring an abundance of grilled dishes. The menu consists of two options (Gurea and Garena), both of which focus on explaining, from a contemporary perspective, the sustenance cuisine of Basque farmhouses and their customs throughout history.

Andra Mari

Andra Mari (Galdakao) 1 star

A farmhouse restaurant that champions cuisine with strong Biscayan roots (rural and maritime), seeking to bring traditional Basque flavours into the present day, always based on the finest seasonal ingredients and constant collaboration with small local producers. Don’t miss the hake in green sauce.

Boroa

Boroa (Amorebieta-Etxano) 1 star

A traditional farmhouse and its large garden frame the authentic cuisine of Boroa. A classic that keeps on getting better.

La Revelía

La Revelía (Amorebieta-Etxano) 1 star

This is one of the notable newcomers to the latest edition of the Michelin guide. A very special rural guesthouse surrounded by forest, with just a few rooms, where chef Fernando González serves a small number of tables with cuisine that is “Basque-based and traditional, but not afraid of a touch of creativity”.

Bakea

Bakea (Mungia) 1 star

Alatz Bilbao, the latest enfant terrible of Basque cuisine, receives well-deserved recognition for his cooking, always in search of authenticity.

Etxebarri

Etxebarri (Axpe) 1 star

Here, the alchemist of fire, Bittor Arginzoniz, practises his art of grilling and his reverence for produce. A universal benchmark for highly complex primary formulas.

Txispa

Txispa (Axpe) 1 star

The artistry of Tetsuro Maeda, a gifted student of Arginzoniz, is one of the latest additions to the gastronomic scene in Bizkaia. At Txispa, Basque tradition is infused with Japanese heritage.

These are all the Michelin stars in Bizkaia. They are located within a radius of less than 40 kilometres. Go and enjoy them.

Green stars and sustainability

In addition, some restaurants in Bizkaia have also been recognised with Michelin Green Stars, which reward commitment to sustainability, the circular economy and respect for the environment. In this edition, Garena (Dima) and Bakea (Mungia) have received the award for their responsible practices, highlighting the growing importance of sustainable cooking in haute cuisine.
